Sourdough bread has gone viral again. This time, it鈥檚 for the wrong reasons, writes Varsha Anjali.听
On August 22, Texas resident Maria Barradell unveiled a bowl of what looked like raw dough before panning her phone camera to a window. Through it, you saw a jet鈥檚 wing and clouds way below. She captioned the Instagram reel: 鈥淢aking听sourdough bread听in [sic] my flight to听Spain.鈥听
The crowd went wild. But not in the way Barradell would have hoped.听
Since the听Covid pandemic, social media content featuring making sourdough bread became The Thing To Do. As Emily St James of听Vox听noted in an article: 鈥淏read baking is a thing we do in a crisis, perhaps because bread is one of the very foundations of human civilisation, and perhaps because it has been marketed to us as life-giving.鈥听
In other words, if you didn鈥檛 see people kneading dough on your 鈥淔or You Page鈥 four years ago, firstly, I am envious - you probably weren鈥檛 on social media, because it was everywhere.听
But for Barradell, demonstrating the myriad wonders of sourdough bread on social media isn鈥檛 just a boredom killer during a global crisis - as a home bakery owner, it鈥檚 her schtick.听
The mum of five鈥檚 bread content on Instagram typically garners a few dozen comments. However, the one of her making sourdough bread on a flight to Spain to 鈥渟urprise鈥 her sister racked up more than 1400 comments. Instead of admiring Baradell鈥檚 ability to ferment - quite literally - sky-high, commenters were quick to criticise her actions, labelling them 鈥渋nconsiderate鈥.听
But why?听

The backlash听
The blowback against Baradell鈥檚 video on social media was swift and unforgiving.听
With more than 8000 likes, the top comment remarked on the absurdity of the act, saying: 鈥淚magine you settle into your seat and the person next to sets up a camera and starts taking out bowls, ingredients and making bread,鈥 followed by three tombstone emojis.听
Some others thought the act was not only disgusting but rude too. 鈥淎s a flight attendant, I鈥檓 gonna say: Ewwwww 鈥 Enjoy your germ-bread. That鈥檚 an airplane - not a bakery. Learn some manners, people 鈥 please,鈥 commented one user.听
Many pointed out the seeming disregard for people with gluten and wheat sensitivities. 鈥淚f I was sat next to you, I would ask for a new seat immediately and a full refund because it would make me sick for several weeks to just inhale the flour. Please be more considerate next time,鈥 raged another commenter.听
Baradella responded to the mountain of criticism on August 26, saying she was 鈥渢rying to be creative鈥 and commenters had helped her see that it 鈥渨as not a great idea鈥.听

Perhaps the better question is, should you?听
Kneading and folding dough with live cultures mid-air is a baffling sight. Barradell may have been roasted for her actions - but in New Zealand, it鈥檚 unlikely you would even be able to get that far.听
鈥淧assengers should not bring in any raw food mixes as these could contain honey or egg, which are against our biosecurity rules,鈥 said a spokesperson for the Ministry for Primary Industries, which manages the country鈥檚 biosecurity regulations.听
People suffering from severe food intolerances also face risks when flying.听Air New Zealand听states on its website that while all flights that provide meals have a gluten intolerance option, it 鈥渃an鈥檛 guarantee there will be no trace of gluten on the aircraft or in your meal鈥.听
It went on: 鈥淚f you have a severe reaction to gluten, we suggest taking the same precautions you normally would when eating at a restaurant.鈥听
However, for general food intolerances and health requirements, airlines, including the national carrier, are usually able to help if they are alerted in advance - for example, ordering a special meal or allowing you to bring your own food.听
If feeling rebellious, it might be best to avoid lunging for the bowl, the whisk and the sourdough starter.听
