Ingredients听
70g butter, melted听听
1 small-medium egg听
1/3 cup regular white sugar听听
1 orange听
陆 cup plain flour听听
1 tsp baking powder听
2 heaped tbsps ground almonds听
1-2 tbsps milk, if needed听

Sauce听听
1 陆 cups boiling water听
1/3 cup brown sugar, loosely packed听
1 tablespoon butter听听
Juice from remaining 陆 orange听
1 tsp cornflour听听

Method听
Preheat oven to180 C. Grease a small ovenproof dish.听
In a bowl, whisk egg with sugar. Add in the melted butter & whisk. Blitz half the orange 鈥攕kin and all鈥� until it鈥檚 pulped then stir this in. Add in flour, baking powder and almonds. Stir until combined. Add in 1-2 tbsp milk if it鈥檚 too stiff. Scrape鈥痓atter into the greased dish.鈥�听In the batter bowl (scraped clean) mix the boiling water, brown sugar, butter, cornflour and juice from the remaining half orange. Gently pour this over the batter. Bake for 40 mins, or until cake bit is cooked through.听听
Serve with ice cream or whipped cream.听听

Use any citrus 鈥� mandarin, lemon, tangerine听
For very pithy fruit, use the skin and flesh of the orange but not all the pith 鈥� too bitter听
